Easy Baked Corn


I love baked corn. For the last few years, it’s been one of my contributions to the Thanksgiving feast. It’s always good, but I’ve never used the same recipe twice. This year, instead of spending hours in front of the computer searching for a recipe, I cheated. I mean, I really cheated. I love it when my laziness turns out to be a good thing. This Easy Baked Corn cheat is super yummy!

What you need-

Corn bread mix (I used Krusteaz Natural Honey Corn Bread and Muffin Mix) and anything the mix calls for. This mix called for some milk, some oil and an egg.

2 cans of cream corn

2 cans of whole kernel corn, drained.

What you do-

Follow corn bread direction for pre-heating, pan prep and mixing. After the corn bread batter is put together and mixed, stir in all 4 cans of corn. Pour mixture into your baking dish of choice, and bake until mixture no longer jiggles. I followed the box directions and ended up baking an additional 20 minutes.

Here’s how mine turned out. It’s SOOOOOO yummy!
